Rolled French Toast – Recipe: Desserts / Puddings

This evening I decided to attempt some cooking which by my standards went rather well.

I successfully attempted to make some Rolled French Toasts to have as a pudding and here is the recipe below.

Serves 4

12 slices bread (medium thickness maximum!)
Cream cheese
Small sliced strawberries (16 pieces to each large strawberry)
4 eggs
1½ tablespoons milk
1 teaspoon cinnamon
1 teaspoon vanilla extract

Neatly cut off the crusts of each slice of bread so that they remain as close to a rectangle as possible. Then roll out each slice with a rolling pin so it is as thin as can be.

On the bottom third of the slice of bread, spread the cream cheese and lay on top some strawberries. Roll up the slice as tight as possible and put a little bit more cream cheese on the end so that the end of the bread stays pressed against the roll. Repeat for each slice of bread.

Mix together with a small whisk or fork the eggs, milk, cinnamon and vanilla extract. Once thoroughly mixed together, dip the rolls into the mixture. Then fry in a liberally buttered skillet, turning frequently until all sides are golden brown.

Serve hot with whatever topping you choose. In my case vanilla ice cream and raspberry coulis.
